This kale, white bean, and Tofurky kielbasa sausage stew/soup is the most home cooking I’ve done in a long time (leave it to me to make soup in my non-AC’d kitchen on a super scorcher of a day). I followed this recipe and added 2 cups of veggie stock, a splash of balsamic vinegar, some red pepper flakes, and a glug of red wine. Totally worth all the onion tears (wow, I forgot that happens!) and the sweating over a hot stove (but not in the pot - phew!).
